Mucilage
It is removed from beans. On a wet state, it accounts for 14.85% of weight of the fresh fruit. For every million 60-kg bags of green coffee that Colombia exports, about 55,500 tons of fresh mucilage is generated, which causes pollution if not properly disposed of.
Grind
Espresso requires a very fine grind that allows an extraction time of 25 to 30 seconds. Only with this grind it is possible to get all the crema and body that define an authentic espresso.
Microlots
Production plots used in fine coffee markets to process coffee according to varieties, soil type, microclimate, topography, height, bean ripeness, and harvest time. This allows the flavor characteristics to remain intact and to not dilute when mixed with other lots or varieties.
Blend
Mix of several types of green coffee (and the processes they are subjected to) for obtaining a balanced drink in body, aroma and acidity.
Weed management
Activity based on selection of noble weeds that allow conserving soil resources. Plant covers protect soil from the impact of raindrops, the main cause of erosion of coffee soils.
Leachate
Liquids produced by decomposition of organic matter. When flowing, they dissolve substances and carry particles present in waste.
Freeze drying
Process by which the coffee extract already concentrated is dried. The extract is first frozen until it forms an ice layer, which is granulated in special mills and then led to high-vacuum chambers, where ice sublimates to leave soluble coffee particles as end product.
Washing
One of the most important steps in production of high-quality Colombian coffee. Dry processing is another method, which produces coffee of different characteristics.
